ReplyDeleteMy December crop that is in full harvest at the moment is escarole. Escarole pies abound chez nous. A thin wedge--OK, some cold dreary days, many, many, many thin wedges are unabashedly consumed--constitutes my daily tonic.
The pies are crust-less and packed with my own garden-grown escarole, onions, garlic, and sweet red bell peppers strips sauteed in olive oil and laced with an creamy Parmesan custard flavoured with red pepper flakes and freshly grated nutmeg. Green and red, very jolly indeed.
So nice to know that longer days have started. I will start late winter planting soon for an early Spring harvest (peas, lettuce, beets, carrots, turnips, etc).
